So what does Kikkoman have to do with brownies and a giveaway? Well, they recently sent over several products for me to try, and soy milk (in chocolate and original) was one of those things. It seems obvious now since they work with soy, but I had no idea Kikkoman's name was on it (see paragraph above about needing to be more observant with labels). (Also, keep reading for info about the giveaway.)
Since I already knew I love their soy sauce (Ginger Glazed Mahi-Mahi, Sweet Chili Tilapia, Easy Fried Rice, Fish in a Garden, and Sweet, Spicy and Citrus Tilapia), teriyaki sauce, and bread crumbs, I decided to give their chocolate soy milk a whirl. Not only does it taste smooth and creamy, but it didn't even taste like soy milk. I think it would be delicious heated up—instant hot chocolate, but I wanted to go one step further and cook with it. I checked out their selection of recipes and knew instantly what I would make:
Chocolate Lover's Cake Brownies.
Ingredients (slightly adapted from link above):
1-1/2 cups all-purpose flour1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1-1/4 cups granulated sugar
1/2 cup unsweetened cocoa
1 teaspoon cinnamon
2/3 cup vegetable oil2 eggs
1-1/2 teaspoon vanilla extract
3/4 cup Pearl Chocolate
Powdered sugar (optional)
These little guys are tasty! They're definitely more cake-like than regular brownies, but they have such a nice, velvety chocolate taste to them that make you want to eat one (or two) more than you really should. The only thing I didn't like was how much oil was in the recipe, and if I make it again I'll try substituting some applesauce.
